Filling One Pot Meal for 2

One pot meals save me during the weeknights after a long day of work or when my boyfriend and I work opposite schedules. I'm running out the door for class while he's coming in from work and the gym. I was looking for a way to get veggies, meat, and a carb into our dinner routine and then I stumbled upon this! Smoked Kielbasa and Rice One Skillet. The best part about this meal was the leftovers for our lunches the next day! Read on for the recipe:



Ingredients:

  • 1 tbs olive oil

  • 1 tbs butter

  • 1lb of your favorite type of Kielbasa

  • 2 cups of broccoli florets (a frozen package works great for this)

  • 1 1/2 cups cooked white rice

  • 1 tsp garlic powder

  • 1 tsp onion salt

  • 1/4 tsp pepper

  • 1 green pepper

  • 1/2 tsp salt

  • 1 cup shredded mozzarella cheese

Directions:

  1. Heat a large skillet over medium heat. Add butter and olive oil until melted.

  2. Add the sliced kielbasa and cook for about 5-7 minutes until kielbasa is brown.

  3. Boil water and add rice. Set aside.

  4. Add the broccoli and chopped green pepper and cover. Reduce heat to low and cook for about 5 minutes more, stir occasionally.

  5. Add the cooked rice, garlic powder, and onion salt to skillet. Stir well.

  6. Add the mozzarella cheese and stir

  7. Remove from heat and serve warm.
