Fall is officially here, but I'm holding onto the last bits of summer. While it's cool enough to throw a batch of cookies together in the morning, I can't bring myself to get into my apple recipes quite yet. In this recipe, I combined my family's favorite cookie and fruit. These are great to bring to a birthday party, cookout, or just to snack on throughout the week. This recipe has everything you love about a soft chocolate chip cookie but is a step-up with the sweetness of the strawberry pieces. This will only make about 24 cookies which is perfect for my fiancé and I. However, if I'm taking them to a picnic or a party, I double the recipe.
If you don't like big chunks of strawberries throughout, then I suggest cutting them up smaller or using dried strawberries as an alternative. I prefer the fresh berries and like getting a little bit of strawberry and chocolate chip in one bite!
INGREDIENTS:
1 cup (2 sticks) unsalted butter
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 tbsp vanilla extract
2 cups all-purpose flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 cup semi-sweet chocolate chips
1 cup strawberries (fresh is best)
DIRECTIONS:
1. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
In a large mixing bowl or stand mixer, beat together the butter, brown sugar, granulated sugar, and vanilla until combined. Beat in the eggs, one at a time, until fully combined. Add the flour, baking soda, baking powder, and salt.
Fold in one cup of semi-sweet chocolate chips.
Fold in 1 cup of strawberries.
Using a cookie scooper, place the balls three to four inches apart on the baking sheet.
Transfer to the oven and bake for 10 minutes. Serve immediately.
